Position Overview

The Head Brewer is a full-time, salaried leadership role responsible for all aspects of brewing operations at Two Docs Brewing Co.. This individual will oversee recipe development, production scheduling, quality control, equipment maintenance, and brewhouse staff. The ideal candidate is a skilled brewer with a passion for craft beer, strong technical knowledge, and the ability to lead a small team in a fast-paced environment.

Key Responsibilities

Brewing Operations

  • • Manage all aspects of the brewing process from grain to glass, including mashing, lautering, boiling, fermentation, conditioning, and packaging
  • • Develop, refine, and document recipes for year-round, seasonal, and specialty releases
  • • Maintain and enforce strict quality control and consistency standards across all batches
  • • Oversee cellar operations, including yeast management, tank cleaning, and fermentation monitoring
  • • Supervise and mentor brewhouse staff, including scheduling, training, and performance oversight
  • • Foster a safe, collaborative, and productive work environment
  • • Coordinate with the taproom and sales teams to align production with demand
  • • Actively participate in local, state, and national brewery associations and guilds, representing Two Docs Brewing Co. and staying engaged with the broader craft brewing community
  • • Perform and oversee routine equipment maintenance, cleaning, and sanitation protocols
  • • Identify and communicate equipment needs, repairs, and capital improvements to ownership
  • • Maintain compliance with all Texas Alcoholic Beverage Commission (TABC) regulations and local health codes
  • • Manage raw material inventory including malt, hops, yeast, and adjuncts
  • • Develop and maintain production schedules to meet taproom and distribution needs
  • • Track and report key production metrics including batch yields, efficiency, and waste

Qualifications

Required

  • • Minimum 1–2 years of professional brewing experience, with at least 1 year in a lead or supervisory brewing role
  • • Demonstrated experience with a variety of beer styles and brewing techniques
  • • Strong working knowledge of brewing chemistry, microbiology, and sanitation principles
  • • Ability to operate and maintain standard brewing equipment (brew system, fermenters, brite tanks, canning/kegging lines)
  • • Physical ability to lift 55+ lbs, work on feet for extended periods, and perform manual labor in a brewery environment
  • • Valid driver's license
  • • Formal brewing education or certification (e.g., Siebel Institute, American Brewers Guild, Cicerone, BJCP)
  • • Experience with small to mid-size craft brewery operations (1,000–5,000 BBL/year)
  • • Familiarity with Texas craft beer market and TABC compliance requirements
  • • Experience with brewery management software

Preferred

  • • Formal brewing education or certification (e.g., Siebel Institute, American Brewers Guild, Cicerone, BJCP)
  • • Experience with small to mid-size craft brewery operations (1,000–5,000 BBL/year)
  • • Familiarity with Texas craft beer market and TABC compliance requirements
  • • Experience with brewery management software

Health Reimbursement Arrangement (ICHRA)

Two Docs Brewing Co. provides a monthly health reimbursement benefit of $300 through an Individual Coverage Health Reimbursement Arrangement (ICHRA). This allows you to select any ACA-qualified health insurance plan that best meets your personal needs, and submit premiums and eligible medical expenses for reimbursement — tax-free. You are in control of your coverage.

Paid Time Off

10 days (80 hours) of paid time off per year, accrued on a per-pay-period basis. PTO may be used for vacation, personal time, or illness.

Paid Holidays

The Head Brewer receives 8 paid holidays off per calendar year. Please note that Two Docs Brewing Co. may remain open for business on some or all of these dates, and taproom operations will continue as scheduled. These paid days apply specifically to the Head Brewer position:

  • • Martin Luther King Jr. Day (Third Monday in January)
  • • Easter Sunday
  • • Memorial Day (Last Monday in May)
  • • Independence Day (July 4)
  • • Labor Day (First Monday in September)
  • • Thanksgiving Day (Fourth Thursday in November)
  • • Christmas Day (December 25)

Continuing Education

Two Docs Brewing Co. is committed to investing in the professional development of our Head Brewer. An annual continuing education benefit of up to $1,500 is available for approved brewing-related coursework, certifications, or educational conferences. Eligible expenses include:

  • • Cicerone Certification Program fees and study materials
  • • Siebel Institute, American Brewers Guild, or similar brewing courses
  • • Brewers Association educational programs and webinars
  • • BJCP study and examination fees

Festival & Annual Event Attendance

The Head Brewer is encouraged and supported in attending key industry events to stay current with brewing trends, network with peers, and represent Two Docs Brewing Co. in the craft beer community. Annual event budget of up to $2,000 covers registration, travel, and accommodations for approved events, which may include:

  • • Great American Beer Festival (GABF) — Denver, CO
  • • Texas Craft Brewers Festival — Austin, TX
  • • Brewers Association Craft Brewers Conference
  • • Local and regional Texas beer festivals

Relocation / Moving Stipend

Candidates relocating from outside the Lubbock area are eligible for a $2,000 moving stipend, paid in two installments: $1,000 upon your first day of employment and $1,000 upon successful completion of your 90-day probationary period. This benefit is available to any candidate whose primary residence at the time of hire is located outside of Lubbock, Texas.
